8 oz (225g) high-quality dark chocolate (70% cocoa)

1/2 cup (120ml) heavy cream

1/4 cup (60ml) raspberry puree (fresh or store-bought)

1 tablespoon unsalted butter, room temperature

1 teaspoon vanilla extract

1 cup (100g) cocoa powder (for dusting)

Fresh raspberries, for garnishing

Edible gold leaf (optional, for decoration)

Instructions
 

Prepare the Raspberry Puree: If using fresh raspberries, blend them in a food processor until smooth. Strain through a fine-mesh sieve to remove seeds, yielding about 1/4 cup of raspberry puree.

    Melt the Chocolate: Chop the dark chocolate into small pieces and place in a heatproof bowl. In a small saucepan, heat the heavy cream over medium heat until just simmering (do not boil). Pour the hot cream over the chocolate and let it sit for 2-3 minutes. Stir gently until the chocolate is completely melted and smooth.

      Combine Ingredients: Add the raspberry puree, butter, and vanilla extract to the melted chocolate mixture. Stir until well combined and silky.

        Chill the Ganache: Cover the bowl with plastic wrap and refrigerate for at least 2 hours or until the mixture is firm enough to scoop.

          Form the Truffles: Once chilled, use a melon baller or a small cookie scoop to portion out the ganache. Roll each portion between your hands to form smooth balls. Place them on a parchment-lined baking sheet.

            Dust the Truffles: Place the cocoa powder in a shallow dish. Roll each truffle in the cocoa powder, ensuring they are completely coated. Shake off any excess.

              Garnish and Serve: If desired, place a small piece of edible gold leaf on top of each truffle for a touch of elegance. Arrange the truffles on a serving platter and garnish with fresh raspberries.
