Ingredients

1 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

1 teaspoon baking soda

½ teaspoon salt

1 teaspoon ground cinnamon

1 cup buttermilk

1 large egg

2 tablespoons unsalted butter, melted

1 teaspoon pure vanilla extract

Optional toppings: maple syrup, fresh berries, whipped cream

Instructions

Prepare the Dry Ingredients: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and ground cinnamon until well combined.

Mix the Wet Ingredients: In a separate bowl, whisk together the buttermilk, egg, melted butter, and vanilla extract until smooth.

Combine Wet and Dry Ingredients: Pour the wet mixture into the bowl with the dry ingredients. Gently mix together with a spatula or whisk until just combined. Be careful not to overmix; a few lumps are perfectly fine.

Heat the Griddle: Preheat a non-stick or lightly greased griddle or frying pan over medium heat. To test, sprinkle water on the surface; if it sizzles and evaporates, it’s ready.

Cook the Pancakes: For each pancake, pour about ¼ cup of the batter onto the hot griddle. Cook for about 2-3 minutes or until bubbles form on the surface and the edges look set. Flip and cook for another 1-2 minutes until golden brown and cooked through.

Serve Warm: Stack the pancakes on a plate, and serve immediately with your choice of maple syrup, fresh berries, or whipped cream for extra indulgence!
