1 medium beet, roasted and peeled

1 can (15 oz) chickpeas, drained and rinsed

2 tablespoons tahini

2 tablespoons olive oil

1 tablespoon lemon juice

1 garlic clove, minced

Salt and pepper, to taste

4 slices of whole grain or sourdough bread

1 avocado, sliced

Fresh cilantro or parsley for garnish

Optional: red pepper flakes for a kick

Roast the Beet: Preheat your oven to 400°F (200°C). Wrap the beet in aluminum foil and place it on a baking sheet. Roast for about 45-60 minutes, or until tender when pierced with a fork. Allow it to cool, then peel the skin off and cut into rough chunks.

    Make the Hummus: In a food processor, combine the roasted beet, chickpeas, tahini, olive oil, lemon juice, minced garlic, salt, and pepper. Blend until smooth. If the mixture is too thick, add a tablespoon of water at a time until the desired consistency is reached. Taste and adjust seasoning as needed.

      Toast the Bread: While the hummus is blending, toast the bread slices until golden brown and crispy.
