1 tablespoon olive oil

1 medium onion, diced

2 cloves garlic, minced

1 carrot, diced

1 celery stalk, diced

1 (28 oz) can crushed tomatoes

4 cups vegetable broth

1 teaspoon dried basil

1 teaspoon dried oregano

1/4 teaspoon red pepper flakes (optional for heat)

Salt and pepper to taste

1 (16 oz) package gnocchi

1 cup heavy cream

1 cup fresh spinach, chopped

Grated Parmesan cheese, for serving

Fresh basil leaves, for garnish (optional)

Sauté Aromatics: In a large pot over medium heat, add the olive oil. Once hot, add the diced onion and cook for about 3-4 minutes until softened. Stir in the minced garlic, diced carrot, and celery, and cook for another 3-5 minutes, until fragrant and the vegetables begin to soften.

    Add Tomatoes and Broth: Pour in the crushed tomatoes and vegetable broth. Stir well to combine. Add the dried basil, dried oregano, red pepper flakes (if using), and season with salt and pepper to taste.
