Ingredients

1 cup all-purpose flour

1/4 cup unsalted butter, softened

1/2 cup granulated sugar

1 cup water

1/2 cup milk

1 teaspoon vanilla extract

1 tablespoon cornstarch

1/4 teaspoon salt

1/2 teaspoon ground nutmeg

1/2 teaspoon cinnamon

Optional toppings: whipped cream, fresh berries, or a dusting of powdered sugar

Instructions

Prepare the Crust:

    - Preheat your oven to 425°F (220°C).

      - In a mixing bowl, combine the flour and salt. Add the softened butter and mix until the mixture resembles coarse crumbs.

        - Gradually add about 3 tablespoons of cold water to the mixture, mixing until it holds together. Form the dough into a ball and roll it out on a floured surface to fit a 9-inch pie dish.

          - Transfer the dough to the dish, crimping the edges as desired. Prick the bottom with a fork to prevent bubbling. Set aside.

            Make the Filling:

              - In a medium saucepan over medium heat, combine the sugar, cornstarch, nutmeg, and cinnamon. Whisk together.

                - Slowly pour in the water and milk, continuing to whisk until the mixture thickens slightly, about 5 minutes.

                  - Remove from heat and stir in the vanilla extract.

                    Assemble the Pie:

                      - Pour the thickened filling into the prepared pie crust, smoothing it out with a spatula.

                        Baking:

                          - Bake in the preheated oven for 30-35 minutes, or until the filling is set and the crust is golden brown. The inside might jiggle a bit; it will firm up as it cools.

                            Cool and Serve:

                              - Remove the pie from the oven and let it cool completely on a wire rack. This will help the filling to set further.

                                - Once cooled, refrigerate for at least 2 hours before serving.

                                  - Serve chilled or at room temperature, topped with whipped cream or fresh berries if desired.
