Ingredients

3 cups watermelon, diced

1 cup strawberries, hulled and sliced

1 cup blueberries

1 cup raspberries

1/4 cup fresh mint leaves, chopped

1 tablespoon lime juice

1 tablespoon honey (or maple syrup for vegan option)

Pinch of sea salt

Feta cheese (optional, for garnish)

Instructions

In a large mixing bowl, combine the diced watermelon, sliced strawberries, blueberries, and raspberries. Gently toss the berries and watermelon together to avoid breaking them apart.

In a separate small bowl, whisk together the lime juice, honey (or maple syrup), and sea salt until well combined.

Pour the lime and honey dressing over the fruit mixture. Sprinkle the chopped mint leaves across the top.

Gently fold the dressing into the salad, taking care not to mash the fruit. Ensure the dressing is evenly distributed.

If you’re using feta cheese, crumble it over the top of the salad just before serving for added flavor.

Refrigerate for about 10-15 minutes to allow the flavors to meld together and serve chilled.

Garnish with additional mint leaves and enjoy your refreshing salad!
