4 cups watermelon, cubed (seedless preferable)

1 ½ cups feta cheese, crumbled

½ cup fresh mint leaves, roughly chopped

¼ cup balsamic vinaigrette (store-bought or homemade)

1 tablespoon olive oil

Salt and black pepper to taste

Optional: ¼ cup red onion, thinly sliced

Optional: ¼ cup toasted pine nuts for garnish

Instructions
 

Prepare the Watermelon: Start by cutting the watermelon into bite-sized cubes and place them in a large mixing bowl.

    Add Feta and Mint: Crumble the feta cheese over the watermelon and add the chopped mint leaves to the bowl.
