Wild Herb Couscous Bites

Ingredients
  

1 cup couscous

1 1/4 cups vegetable broth

2 tablespoons olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1/2 cup grated zucchini

1/2 cup chopped fresh herbs (parsley, cilantro, mint, or dill)

1/4 teaspoon red pepper flakes (adjust for spice preference)

1 teaspoon lemon zest

1/2 teaspoon salt

1/4 teaspoon black pepper

1/2 cup crumbled feta cheese (optional for a vegetarian twist)

1 egg, beaten (for binding)

Panko breadcrumbs (for coating)

Cooking oil (for frying)

Instructions
 

In a medium saucepan, bring the vegetable broth to a boil. Remove from heat and add the couscous. Stir, cover, and let it steam for about 5 minutes until fluffy. Fluff with a fork and set aside to cool slightly.

    In a skillet, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes, or until translucent. Add in the minced garlic and cook for another minute until fragrant.

      Stir in the grated zucchini, red pepper flakes, lemon zest, salt, and black pepper. Cook for another 2–3 minutes until the zucchini softens and excess moisture starts to evaporate. Remove from heat and let it cool.

        In a large bowl, combine the cooled couscous, sautéed vegetable mixture, fresh herbs, and crumbled feta (if using). Add the beaten egg and mix until well combined.

          Form the mixture into small bite-sized balls or patties, about 1-2 inches in diameter. Coat each bite in panko breadcrumbs for added texture.

            Heat a skillet with a generous amount of cooking oil over medium-high heat. Once hot, add the couscous bites in batches (avoid overcrowding) and fry for about 3-4 minutes on each side, or until golden brown and crispy.

              Once fried, remove the bites and place them on a paper towel-lined plate to absorb excess oil.

                Serve warm as a starter or snack with a tangy dipping sauce or yogurt sauce on the side.
