1 can (15 oz) chickpeas, drained and rinsed

1 ripe avocado, diced

1 cup cherry tomatoes, halved

1 small red onion, finely chopped

1 cucumber, diced

1/4 cup fresh cilantro, chopped

1/4 cup fresh parsley, chopped

Juice of 2 limes

2 tablespoons extra-virgin olive oil

1 teaspoon garlic powder

1/2 teaspoon cumin

Salt and pepper to taste

Optional: 1/2 teaspoon red pepper flakes for heat

Instructions
 

In a large mixing bowl, combine the drained chickpeas, diced avocado, cherry tomatoes, chopped red onion, and diced cucumber.

    Gently toss the ingredients together, taking care not to mash the avocado too much.

      In a small bowl, whisk together the lime juice, olive oil, garlic powder, cumin, salt, and pepper (and red pepper flakes if using).

        Pour the dressing over the salad mixture and sprinkle the chopped cilantro and parsley on top.

          Toss everything gently until the salad is well coated with the dressing and the herbs are evenly distributed.

            Taste and adjust seasoning, adding more salt, pepper, or lime juice as desired.

              Let the salad sit for about 10 minutes to allow the flavors to meld.

                Serve immediately or refrigerate it for up to 2 hours before serving for a chilled version.
