Ingredients

2 cups cooked chicken, shredded (preferably rotisserie or grilled)

1 cup BBQ sauce (your favorite brand or homemade)

1 cup fresh or frozen corn kernels (thawed if frozen)

1 cup shredded cheese (cheddar and Monterey Jack mix works great)

4 large flour tortillas

1 tablespoon olive oil (for cooking)

1 teaspoon smoked paprika

1 teaspoon garlic powder

1 small red onion, diced

1/4 cup chopped fresh cilantro (optional for garnish)

Sour cream or Greek yogurt (for serving, optional)

Lime wedges (for serving, optional)

Instructions

Prepare the Filling: In a large bowl, combine the shredded chicken, BBQ sauce, corn, smoked paprika, garlic powder, and diced red onion. Mix well until all ingredients are evenly coated in the sauce.

Assemble the Quesadillas: Lay out one tortilla on a clean surface. On one half of the tortilla, layer 1/4 of the chicken mixture and sprinkle 1/4 of the shredded cheese on top. Fold the tortilla over to create a half-moon shape. Repeat this step for the remaining tortillas.

Cook the Quesadillas: Heat the olive oil in a large skillet over medium heat. Carefully place one quesadilla in the skillet and cook for about 3-4 minutes on one side until golden brown and crispy. Flip and cook for another 3-4 minutes on the other side, ensuring the cheese is melted and the quesadilla is golden and crispy. Remove from skillet and let it rest for a minute. Repeat with the remaining quesadillas.

Slice and Serve: Use a sharp knife or pizza cutter to slice the quesadillas into wedges. Serve them warm, garnished with fresh cilantro, and alongside sour cream or Greek yogurt and lime wedges for drizzling.

Enjoy: Dive into your zesty BBQ chicken and corn quesadillas, enjoying the flavorful filling with a crispy outer layer!
