8 oz. rotini pasta

2 cups cooked chicken breast, diced

1 cup cherry tomatoes, halved

1 cup cucumber, diced

1/2 cup red bell pepper, diced

1/2 cup red onion, finely chopped

1 cup corn (canned or frozen)

1/2 cup mayonnaise

1/2 cup sour cream

1/2 cup ranch dressing

1 tablespoon lime juice

1 teaspoon garlic powder

1 teaspoon onion powder

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions
 

Cook the pasta: In a large pot of salted boiling water, cook the rotini pasta according to package instructions until al dente. Drain and rinse under cold water to cool. Set aside.

    Prepare the chicken: If you haven't cooked the chicken, season chicken breasts with salt, pepper, and a little olive oil. Grill, bake, or pan-sear until fully cooked. Once cooled, dice into bite-sized pieces.

      Combine vegetables: In a large mixing bowl, combine the cherry tomatoes, cucumber, red bell pepper, red onion, and corn. Mix well.

        Make the dressing: In a separate bowl, whisk together the mayonnaise, sour cream, ranch dressing, lime juice, garlic powder, and onion powder until smooth. Adjust salt and pepper to taste.
