Ingredients

4 boneless, skinless chicken breasts

1/4 cup olive oil

3 cloves garlic, minced

Zest of 2 lemons

Juice of 2 lemons

1 tablespoon honey

1 teaspoon dried oregano

1 teaspoon dried thyme

1 teaspoon red pepper flakes (adjust for spice preference)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Instructions

Prepare the Marinade: In a medium bowl, whisk together the olive oil, minced garlic, lemon zest, lemon juice, honey, oregano, thyme, red pepper flakes, salt, and pepper until well combined.

Marinate the Chicken: Place the chicken breasts in a large ziplock bag or a shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Seal the bag or cover the dish and let it marinate in the refrigerator for at least 30 minutes, or up to 2 hours for maximum flavor.

Preheat the Grill or Oven: If grilling, preheat the grill to medium-high heat. If baking, preheat the oven to 400°F (200°C).

        Cook the Chicken:

          - For Grilling: Remove the chicken from the marinade, allowing excess to drip off. Grill the chicken for about 6-7 minutes per side, or until the internal temperature reaches 165°F (75°C).

            - For Baking: Place the marinated chicken on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes, or until cooked through.

Rest and Serve: Once the chicken is cooked, let it rest for 5 minutes. Garnish with freshly chopped parsley before slicing.

Enjoy Your Dish: Serve with steamed vegetables, a fresh salad, or over a bed of fluffy rice to soak up the zesty juices.
