Zesty Lemon Greek Chicken

Ingredients
  

4 boneless, skinless chicken breasts

1/4 cup extra virgin olive oil

Juice and zest of 2 large lemons

4 cloves garlic, minced

2 teaspoons dried oregano

1 teaspoon dried thyme

1 teaspoon salt

1/2 teaspoon black pepper

1/4 teaspoon red pepper flakes (optional, for heat)

1 cup cherry tomatoes, halved

1/2 cup Kalamata olives, pitted and sliced

1/2 cup feta cheese, crumbled

Fresh parsley, chopped (for garnish)

Instructions
 

Marinate the Chicken:

    In a large bowl, whisk together the olive oil, lemon juice, lemon zest, minced garlic, oregano, thyme, salt, pepper, and red pepper flakes (if using). Add the chicken breasts and toss to coat evenly. Cover and marinate in the refrigerator for at least 30 minutes, preferably for 2 hours to enhance the flavors.

      Preheat the Grill or Oven:

        If using a grill, preheat it to medium-high heat. If cooking in the oven, preheat it to 400°F (200°C).

          Cook the Chicken:

            Remove the chicken from the marinade, shaking off any excess. If grilling, place the chicken on the grill and cook for about 6-7 minutes per side, or until fully cooked and internal temperature reaches 165°F (75°C). If baking in the oven, place the chicken in a baking dish and bake for 25-30 minutes or until cooked through.

              Add the Vegetables:

                In the last 5 minutes of cooking (either on the grill or in the oven), scatter the halved cherry tomatoes and sliced Kalamata olives around the chicken. This will allow them to warm through and soak up some delicious juices.

                  Serve:

                    Once the chicken is cooked, remove it from the grill or oven and let it rest for 5 minutes. Slice the chicken and plate it, topped with the roasted tomatoes, olives, and crumbled feta. Garnish with fresh parsley for a pop of color and flavor.
