Zesty Lime & Cilantro Rice Bowls

1 cup jasmine rice

2 cups vegetable broth (or water)

Zest and juice of 2 limes

1 tablespoon olive oil

1 small red onion, finely chopped

3 cloves garlic, minced

1 teaspoon ground cumin

1 can (15 oz) black beans, drained and rinsed

1 cup corn kernels (fresh, frozen, or canned)

1 red bell pepper, diced

1 avocado, diced

1/4 cup fresh cilantro, chopped

Salt and pepper to taste

Optional toppings: sliced jalapeños, lime wedges, and additional cilantro

Instructions
 

Cook the Rice: In a medium saucepan, combine the jasmine rice and vegetable broth. Bring to a boil, then reduce the heat to low, cover, and simmer for 15 minutes or until the liquid is absorbed and the rice is tender. Remove from heat and let it sit covered for an additional 5 minutes.

    Prepare the Flavor Base: While the rice is cooking, heat the olive oil in a large skillet over medium heat. Add the chopped red onion and sauté for about 2-3 minutes, until softened. Stir in the minced garlic and ground cumin, cooking for another 1 minute until fragrant.

      Add Beans and Corn: Add the black beans and corn to the skillet. Stir and cook for 3-4 minutes until heated through. Season with salt and pepper to taste.

        Prepare Rice Bowl Base: Once the rice has rested, fluff it with a fork. Stir in the lime zest, lime juice, and chopped cilantro, ensuring everything is well combined.

          Assemble Bowls: In serving bowls, layer the lime-cilantro rice as the base. Spoon the black bean and corn mixture on top. Add diced red bell pepper and avocado for extra color and texture.
