For the Turkey Meatballs:

1 pound ground turkey

1/2 cup breadcrumbs (preferably whole wheat)

1/4 cup grated Parmesan cheese

1 large egg

2 tablespoons fresh parsley, chopped

1 clove garlic, minced

Zest of 1 lemon

1 teaspoon Italian seasoning

Salt and pepper to taste

For the Soup:

1 tablespoon olive oil

1 medium onion, diced

2 carrots, diced

2 celery stalks, diced

3 cloves garlic, minced

6 cups chicken broth

1 cup orzo pasta

1 can (14.5 oz) diced tomatoes, undrained

1 teaspoon dried oregano

Salt and pepper to taste

Fresh lemon juice (from 1 lemon)

Additional fresh parsley for garnish

Instructions
 

Make the Meatballs:

    - In a large mixing bowl, combine the ground turkey, breadcrumbs, Parmesan cheese, egg, parsley, garlic, lemon zest, Italian seasoning, salt, and pepper.

      - Mix until well combined, but do not overmix. Form the mixture into small meatballs (about 1 inch in diameter) and place them on a baking sheet or platter.

        Brown the Meatballs:

          - In a large pot or Dutch oven, heat olive oil over medium heat.

            - Add the meatballs in batches and brown them on all sides for about 5-7 minutes. Remove and set aside.

              Prepare the Soup:

                - In the same pot, add the diced onion, carrots, and celery. Sauté until the vegetables are soft, about 5-6 minutes.

                  - Stir in the minced garlic and cook for another minute until fragrant.

                    Simmer the Soup:

                      - Pour in the chicken broth, diced tomatoes, and dried oregano. Bring the mixture to a boil.

                        - Add the orzo pasta and return to a simmer. Cook for about 8-10 minutes or until the orzo is al dente.

                          Combine Meatballs and Soup:

                            - Gently add the browned turkey meatballs back to the soup. Allow everything to simmer together for an additional 5 minutes.

                              - Season with salt, pepper, and fresh lemon juice to taste.

                                Serve:

                                  - Ladle the soup into bowls and garnish with additional fresh parsley. Serve hot with crusty bread for an extra zesty touch.
