Ingredients
  

1 pound salmon fillet, skinless and boneless, cut into 1-inch cubes

2 tablespoons fresh ginger, grated

2 tablespoons soy sauce

2 tablespoons honey

Juice and zest of 1 large orange

2 tablespoons olive oil

2 cloves garlic, minced

1 teaspoon sesame oil

Salt and pepper, to taste

1 red bell pepper, cut into 1-inch pieces

1 zucchini, sliced into thick rounds

1 red onion, cut into wedges

Skewers (wooden or metal)

Instructions
 

Marinate the Salmon: In a medium bowl, combine the grated ginger, soy sauce, honey, orange juice and zest, olive oil, minced garlic, and sesame oil. Whisk until well blended. Add cubed salmon to the bowl, ensuring all pieces are well coated. Cover and marinate in the refrigerator for at least 30 minutes.

    Prepare the Vegetables: While the salmon marinates, prepare the vegetables. Cut the red bell pepper, zucchini, and red onion into appropriate sizes for skewering. You can also toss them in a little olive oil, salt, and pepper for added flavor.

      Soak Skewers (if using wooden): If you’re using wooden skewers, soak them in water for about 30 minutes to prevent burning on the grill.

        Assemble Skewers: Once the salmon is marinated, it's time to assemble the skewers. Thread a piece of salmon followed by a piece of red bell pepper, then a piece of onion, and finally a slice of zucchini. Repeat until the skewers are filled, leaving a little space between each piece.

          Preheat the Grill: Heat your grill to medium-high heat. If using a grill pan, preheat it over medium-high heat on the stove.

            Grill the Skewers: Lightly oil the grill grates or the grill pan to prevent sticking. Place the skewers on the grill and cook for about 3-4 minutes on each side, or until the salmon is cooked through and has nice grill marks. If you find that the vegetables are cooking faster than the salmon, remove them as they become tender.

              Serve: Once done, remove the skewers from the grill and let them rest for a minute. Serve on a platter, garnished with additional orange zest or cilantro if desired. Pair with steamed rice or a fresh salad for a complete meal.
