For the Zucchini Bites:

2 medium zucchinis, grated

1 cup breadcrumbs (preferably whole wheat or panko)

½ cup grated Parmesan cheese

1 large egg, lightly beaten

1 clove garlic, minced

1 tsp dried oregano

1 tsp dried basil

½ tsp salt

¼ tsp black pepper

Cooking spray or olive oil for baking

For the Marinara Dip:

1 cup marinara sauce (store-bought or homemade)

1 tsp olive oil

1 clove garlic, minced

½ tsp dried Italian herbs (oregano, basil, thyme)

A pinch of red pepper flakes (optional)

Prepare Zucchini: Preheat your oven to 400°F (200°C). Lightly salt the grated zucchini and let it sit in a colander for about 10 minutes to draw out excess moisture. Afterward, squeeze out as much liquid as possible using a clean kitchen towel or paper towels.

    Mix Ingredients: In a large mixing bowl, combine the drained zucchini, breadcrumbs, grated Parmesan, beaten egg, minced garlic, dried oregano, dried basil, salt, and black pepper. Mix everything together until well combined.

      Shape Bites: Line a baking sheet with parchment paper. Using your hands, form the zucchini mixture into small bite-sized patties or rounds (about 1–2 inches in diameter) and place them on the prepared baking sheet. Spray the tops lightly with cooking spray or drizzle with olive oil.

        Bake Zucchini Bites: Bake in the preheated oven for 20-25 minutes, flipping halfway through, until the bites are golden and crispy on the outside.

          Prepare Marinara Dip: While the bites are baking, heat olive oil in a small saucepan over medium heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.
