4 medium zucchinis

1 pound ground turkey

1 cup diced tomatoes (canned or fresh)

1/2 cup chopped onion

2 cloves garlic, minced

1 teaspoon Italian seasoning

1 teaspoon smoked paprika

1/2 teaspoon salt

1/4 teaspoon black pepper

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Fresh basil or parsley for garnish (optional)

Preheat Oven: Start by preheating your oven to 375°F (190°C) to prepare for the baking stage.

    Prepare Zucchini: Slice the zucchinis in half lengthwise. Using a spoon, scoop out the seeds and some of the flesh to create boats, leaving a thin layer of zucchini at the bottom. Set aside the scooped-out flesh.

      Cook Turkey Filling: In a large skillet over medium heat, add the ground turkey. Cook until browned, breaking it apart with a spatula.

        Add Aromatics: Once the turkey is browned, add the chopped onion and minced garlic to the skillet. Sauté for about 3–4 minutes until the onions are translucent.

          Incorporate Ingredients: Stir in the diced tomatoes, scooped-out zucchini flesh, Italian seasoning, smoked paprika, salt, and pepper. Cook the mixture for another 5 minutes, allowing the flavors to meld together.

            Fill Zucchini Boats: Remove the skillet from heat. Carefully spoon the turkey mixture into each zucchini boat, packing it slightly to ensure it's filled generously.
