2 medium zucchini, grated

1 cup fresh broccoli florets, finely chopped

1/2 cup shredded carrots

1/2 cup breadcrumbs (panko recommended for extra crunch)

1/2 cup shredded cheddar cheese

1 large egg

2 tablespoons grated Parmesan cheese

1 teaspoon garlic powder

1 teaspoon onion powder

1/2 teaspoon black pepper

1/2 teaspoon salt

1/2 teaspoon smoked paprika (optional)

Olive oil spray (for baking)

Preheat the Oven: Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    Prepare the Vegetables: Grate the zucchini using a box grater or food processor. Place the grated zucchini in a clean kitchen towel and wring out the excess moisture. This step is crucial to avoid soggy tots.

      Mix Ingredients: In a large mixing bowl, combine the grated zucchini, chopped broccoli, shredded carrots, breadcrumbs, cheddar cheese, egg, Parmesan cheese, garlic powder, onion powder, black pepper, salt, and smoked paprika (if using). Mix everything until well combined.

        Form the Tots: Using your hands, form small, firm balls or patties with the mixture. Each tot should be about the size of a golf ball. Place them on the prepared baking sheet, leaving a little space between each.

          Bake: Lightly spray the tops of the tots with olive oil spray to help them crisp up. Bake in the preheated oven for about 20-25 minutes, or until golden brown and crispy, flipping halfway through for even browning.

            Serve: Once baked, remove the tots from the oven and let them cool for a few minutes. Serve warm with your favorite dipping sauce, such as ranch, marinara, or tzatziki.
