2 medium zucchinis, grated and excess moisture squeezed out

1 cup rolled oats

1 cup whole wheat flour

1 teaspoon baking powder

1 teaspoon baking soda

1 teaspoon cinnamon

½ teaspoon nutmeg

½ teaspoon salt

½ cup brown sugar, packed

½ cup granulated sugar

½ cup unsalted butter, softened

2 large eggs

1 teaspoon vanilla extract

1 cup chocolate chips (or your choice of nuts/dried fruits)

½ cup chopped walnuts or pecans (optional)

Powdered sugar for dusting (optional)

Instructions
 

Preheat the Oven: Preheat your oven to 350°F (175°C) and grease a 9x13-inch baking dish or casserole dish.

    Prepare the Zucchini: Grate the zucchinis using a box grater or food processor. Place the grated zucchini onto a clean kitchen towel or cheesecloth and squeeze out excess moisture. This step is critical to avoid watery cookies.

      Mix Dry Ingredients: In a large mixing bowl, combine rolled oats, whole wheat flour, baking powder, baking soda, cinnamon, nutmeg, and salt. Whisk until well incorporated.

        Cream Butter and Sugars: In another mixing bowl, cream together the softened butter, brown sugar, and granulated sugar using an electric mixer on medium speed until light and fluffy (about 2-3 minutes).

          Add Eggs and Vanilla: Beat in the eggs one at a time, then add the vanilla extract, mixing until well combined.

            Combine Mixtures: Gradually fold the dry ingredients into the wet ingredients until just incorporated. Be careful not to overmix.

              Stir in Zucchini and Chips: Gently fold in the grated zucchini and chocolate chips (and walnuts/pecans if using) until evenly distributed in the dough.

                Spread and Bake: Pour the mixture into the prepared baking dish, spreading it evenly. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and a toothpick inserted into the center comes out clean.

                  Cool and Serve: Once baked, remove from the oven and let it cool in the dish for about 10 minutes. If desired, dust with powdered sugar before slicing into squares.
