Zucchini Fritters

2 medium zucchinis, grated

1 teaspoon salt

1/2 cup all-purpose flour

1/2 cup breadcrumbs (preferably panko for added crunch)

1/4 cup grated Parmesan cheese

2 large eggs

2 green onions, finely chopped

2 cloves garlic, minced

1/2 teaspoon black pepper

1/2 teaspoon paprika

1/4 teaspoon red pepper flakes (optional)

Olive oil for frying

Sour cream or Greek yogurt for serving

Instructions
 

Place the grated zucchinis in a clean kitchen towel or cheesecloth. Sprinkle the salt over them and let them rest for about 10 minutes. This will help draw out excess moisture.

    After 10 minutes, gather the cloth and twist it to squeeze out the moisture from the zucchinis until dry. Transfer the drained zucchinis to a large mixing bowl.

      To the zucchinis, add flour, breadcrumbs, Parmesan, eggs, green onions, garlic, black pepper, paprika, and red pepper flakes (if using). Stir well until all ingredients are fully combined and a batter forms.

        Heat a generous amount of olive oil in a large skillet over medium heat. You want enough oil to cover the bottom of the pan well.

          Once the oil is hot (you can test it by dropping a small spoonful of batter into the pan; it should sizzle), drop spoonfuls of the zucchini mixture into the skillet, flattening each fritter slightly with the back of the spoon.

            Cook the fritters for about 3-4 minutes on each side or until they are golden brown and crispy. You may need to work in batches depending on the size of your skillet, ensuring not to overcrowd the pan.

              Once cooked, transfer the fritters to a paper towel-lined plate to drain any excess oil. Keep them warm in a low oven if needed while you finish cooking the remaining batches.

                Serve the fritters warm with a dollop of sour cream or Greek yogurt on the side for dipping!
