Zucchini Lasagna Roll Ups

4 large zucchinis

1 cup ricotta cheese

1 cup shredded mozzarella cheese

½ cup grated Parmesan cheese

1 large egg

2 cups marinara sauce (homemade or store-bought)

2 cloves garlic, minced

1 teaspoon dried oregano

1 teaspoon dried basil

Salt and pepper, to taste

Fresh basil leaves, for garnish (optional)

Prepare the Zucchini: Preheat your oven to 375°F (190°C). Slice the zucchinis lengthwise into thin strips using a mandoline or a sharp knife. Aim for about ¼-inch thickness. Lay the strips on a baking sheet and sprinkle lightly with salt. Let them sit for approximately 15 minutes to draw out excess moisture. Pat dry with paper towels.

    Make the Filling: In a mixing bowl, combine the ricotta cheese, half of the shredded mozzarella, Parmesan cheese, egg, minced garlic, oregano, basil, salt, and pepper. Mix well until fully combined.

      Assemble the Roll Ups: Spread a thin layer of marinara sauce on the bottom of a 9x13 inch baking dish. Take one zucchini strip and place about 2 tablespoons of the cheese mixture at one end. Roll it up tightly and place in the baking dish seam side down. Repeat this for the remaining zucchini strips and filling.

        Top with Sauce and Cheese: Once all the rolls are in the baking dish, pour the remaining marinara sauce evenly over the top. Sprinkle the remaining mozzarella cheese over the sauce.

          Bake: Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Then, remove the foil and bake for an additional 10-15 minutes, or until the cheese is melted and bubbly.

            Garnish and Serve: Remove from the oven and let it cool for a few minutes before serving. Garnish with fresh basil leaves, if desired. Enjoy your delicious zucchini lasagna roll ups!
