2 medium zucchinis

1 cup freshly grated Parmesan cheese

1 cup breadcrumbs (preferably panko for extra crunch)

2 large eggs

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon dried oregano

½ teaspoon red pepper flakes (optional)

Salt and pepper to taste

Olive oil spray

Marinara sauce for dipping (optional)

Preheat the Oven: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    Prepare Zucchini: Wash and dry the zucchinis, then slice them into thick rounds (about ½ inch). You can also cut them into long strips if you prefer the poppers to be more like fries.

      Make the Coating Mixture: In a mixing bowl, combine the Parmesan cheese, breadcrumbs, garlic powder, onion powder, oregano, red pepper flakes, salt, and pepper. Mix well until combined.

        Prepare the Egg Wash: In a separate bowl, beat the eggs until well combined.

          Dip the Zucchini: Take each zucchini piece, dip it first into the egg wash, allowing any excess to drip off, then roll it in the breadcrumb mixture until fully coated. Place each coated piece on the prepared baking sheet.

            Spray with Olive Oil: Lightly spray the tops of the zucchini poppers with olive oil to help them crisp up while baking.

              Bake: Bake in the preheated oven for 20-25 minutes, flipping them halfway through, until they are golden brown and crispy.

                Serve: Once baked, remove the poppers from the oven and let them cool for a few minutes. Serve warm with marinara sauce for dipping, if desired.
