2 medium zucchinis

1 cup marinara sauce (store-bought or homemade)

1 ½ cups shredded mozzarella cheese

½ cup sliced pepperoni (or your choice of toppings)

1 tsp Italian seasoning

½ tsp garlic powder

¼ tsp crushed red pepper flakes (optional for a spicy kick)

Fresh basil leaves for garnish

Olive oil for drizzling

Salt and pepper to taste

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Prepare the Zucchini: Wash and dry the zucchinis. Cut them in half lengthwise and scoop out some of the seeds to create little boats. (You can use a small spoon for this.)

      Season the Zucchini: Lightly brush the cut sides of the zucchinis with olive oil and season with salt, pepper, Italian seasoning, and garlic powder.

        Add Marinara Sauce: Spoon about 1-2 tablespoons of marinara sauce onto each zucchini half, spreading it evenly.

          Top with Cheese and Toppings: Sprinkle a generous amount of mozzarella cheese over the sauce, and top with pepperoni slices (or your preferred toppings).

            Bake the Bites: Place the zucchini boats on a baking sheet lined with parchment paper. Bake in the preheated oven for about 15-20 minutes, or until the cheese is bubbly and slightly golden.

              Broil for Extra Crispiness: For an extra crispy top, switch to broil for the last 2-3 minutes, keeping a close watch to prevent burning.
