2 medium zucchinis

1 large carrot

1 cup cherry tomatoes, halved

1/4 cup red onion, thinly sliced

1/4 cup feta cheese, crumbled

2 tablespoons fresh basil, chopped

2 tablespoons fresh parsley, chopped

1 tablespoon olive oil

1 tablespoon balsamic vinegar

Salt and pepper to taste

1/4 cup toasted pine nuts (optional)

Instructions
 

Prepare the vegetables: Use a vegetable peeler or spiralizer to create long ribbons from the zucchinis. For an added crunch, also create thin ribbons with the carrot. Set aside in a large mixing bowl.

    Add the toppings: To the zucchini and carrot ribbons, add the halved cherry tomatoes, thinly sliced red onion, crumbled feta cheese, chopped basil, and parsley.

      Make the dressing: In a small bowl, whisk together the olive oil, balsamic vinegar, a pinch of salt, and pepper until well combined. Adjust seasoning according to taste.
