2 medium zucchini, thinly sliced lengthwise

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1/4 cup shredded mozzarella cheese

1 garlic clove, minced

1 tablespoon fresh basil, finely chopped

1 tablespoon fresh parsley, finely chopped

Salt and pepper to taste

1 tablespoon olive oil

1/2 teaspoon red pepper flakes (optional)

1/4 cup marinara sauce (for serving)

Fresh basil leaves (for garnish)

Instructions
 

Prepare the Zucchini: Preheat your oven to 400°F (200°C). Lay the zucchini slices on a baking sheet lined with parchment paper. Drizzle with olive oil and sprinkle with salt and pepper. Roast in the oven for 10-12 minutes until slightly tender. Remove from the oven and let cool.

    Make the Filling: In a mixing bowl, combine the ricotta cheese, grated Parmesan, shredded mozzarella, minced garlic, chopped basil, parsley, salt, pepper, and red pepper flakes (if using). Mix until well combined and creamy.

      Assemble the Pinwheels: Take a roasted zucchini slice and place a spoonful of the ricotta mixture at one end. Gently roll the zucchini slice over the filling to form a pinwheel. Secure with a toothpick if necessary. Repeat for all slices.

        Bake the Pinwheels: Place the pinwheels on the baking sheet and bake for an additional 10-15 minutes, or until the cheese is bubbly and slightly golden.
